Maceration lasts 10-15 days in stainless steel tanks at a controlled temperature. The wine then rests in stainless steel tanks until the January following harvest, then ages in used French oak tonneux (medium toast) for 12 months in a temperature-controlled environment. It then ages for a further 2 years in stainless steel tanks and another 6 months in bottle.
